All gifts to charity are exempt from inheritance tax. If you leave 10% or more of your estate to charities, it will reduce the amount of rate of inheritance tax (36% instead of 40%) on the rest of your estate. Please speak to your solicitor for legal advice.
Yes, however the danger is that you may overlook something that will either create confusion or affect the impact of inheritance tax. For example, you could express a wish that is not legally enforceable.

That is perfectly fine. Solicitors normally advise you to review your Will every few years to make sure that it doesn’t become out of date and that it reflects your changing circumstances.
